Urschel will bring its new Little Gem Aspire Dicer to Alimentaria FoodTech in Barcelona from October 6 to 8 as the company expands the machine's international rollout to fruit and vegetable processors.

The compact system is designed to produce slices, dices and strip cuts across products including apples, carrots, mangoes, onions, potatoes, strawberries, tomatoes and zucchini.

At the centre of the design is Urschel's StatiCut knife assembly, which replaces a conventional circular knife assembly and allows processors to change cut sizes and patterns with a relatively small set of components.

The machine produces flat slices from 2 to 20 millimetres, while strip and dice widths can be configured from small cuts up to wider patterns depending on the knife setup.

Urschel positions the equipment as a lower-complexity entry into industrial precision dicing, with a compact footprint and a 1.5 horsepower motor.

The company has been showing the Little Gem Aspire across multiple international exhibitions during 2026, using customer test cutting as part of the commercial introduction.

Alimentaria FoodTech gives the machine exposure to European processors working across fresh produce, prepared foods and other high-throughput applications where consistency and changeover time affect operating cost.

For processors, the practical question is not the launch itself but whether the new knife architecture can deliver the cut flexibility, sanitation and total cost of ownership needed to justify replacing or supplementing existing dicing equipment.
