Novonesis Expands U.S. Dairy Culture Fermentation Capacity by 66%

Novonesis has completed a major expansion of its West Allis, Wisconsin production site, increasing North American dairy culture fermentation capacity by approximately 66 percent.


Packaging capacity at the facility has also risen by 17 percent, and the company says the expansion makes West Allis one of the world's largest lactobacillus production sites.


The plant serves as Novonesis' North American centre of excellence for food cultures and supplies ingredients used by dairy manufacturers in products such as yogurt, cheese and other fermented foods.


The expanded operation adds more fermentation headroom at a time when dairy processors are using cultures not only for flavour and texture but also for process consistency, shelf life and product reformulation.


Novonesis says the project includes automation and robotics alongside water reuse, energy-efficient equipment and waste heat recovery, combining higher throughput with changes intended to improve operating efficiency.


The site employs about 360 people and has been part of dairy culture production in the region for decades, giving the company an established manufacturing base rather than a greenfield startup.


The commercial impact will depend on utilisation. A 66 percent increase in installed fermentation capacity does not automatically translate into the same increase in output because product mix, customer qualification and production scheduling influence actual volumes.


For North American dairy manufacturers, the expansion adds local capacity to a specialised ingredient supply chain where consistency and reliable lead times are critical to large-scale production.
