All saffron we supply is sourced directly from registered cooperatives in the Taliouine district, Morocco's primary saffron-producing region, situated at elevations between 1,200 and 1,800 metres in the Anti-Atlas range.

The Taliouine region holds Morocco's sole Protected Designation of Origin (PDO) for saffron, registered under national standard NM 08.1.037. The PDO designation controls the geographic boundaries, cultivation methods, harvesting practices, and processing standards applicable to all certified Taliouine saffron.

Saffron cultivation in this region is done exclusively by hand. Flowers are picked before dawn, the window during which stigma potency is highest, and immediately separated. Drying is carried out by cooperative processing units under controlled conditions. No mechanical harvesting is used at any stage.

Understanding ISO 3632 Grading

ISO 3632 is the international standard governing saffron quality classification. It measures three compounds via UV-Vis spectrophotometry: crocin (colour strength, measured at 440nm), picrocrocin (bitterness and flavour, at 257nm), and safranal (aroma, at 330nm). Category I is the premium commercial grade. Extra Class is the highest tier, requiring crocin values above 250. Always request the full COA with wavelength readings, any supplier quoting grade without lab data should be verified independently.

PDO Taliouine vs. Non-PDO Moroccan Saffron

Not all Moroccan saffron is PDO Taliouine. The PDO designation applies specifically to saffron produced within the registered geographic perimeter of the Taliouine and Taznakht zones under Moroccan national standard NM 08.1.037. Saffron grown elsewhere in Morocco or re-labelled as Taliouine without cooperative registration does not qualify for PDO designation. We supply only cooperative-registered, PDO-eligible saffron with full provenance documentation.

Adulteration: What to Check

Saffron is the most adulterated spice in international trade. Common adulterants include safflower petals (Carthamus tinctorius), dried corn stigmas, coloured plant fibres, and mineral dyes added to powder. A legitimate Certificate of Analysis from an ISO-accredited laboratory will include tests for extraneous matter, water-soluble extract, and spectrophotometric readings. We do not supply saffron without a current COA. Third-party pre-shipment testing can be arranged at buyer's request.

Organic Certification for Moroccan Saffron

Taliouine saffron is largely farmed without synthetic pesticides, but not all producers hold formal organic certification. AB (Agriculture Biologique) certification and EcoCert compliance require annual third-party inspection and full input documentation. We can supply AB-certified and EcoCert-compliant saffron with the relevant certificates. For EU organic import, the certificate of inspection (COI) issued under EU Regulation 2018/848 is required, we coordinate this documentation as part of the order.

Import Regulations by Market

Saffron is subject to phytosanitary certification on import into most markets. The EU requires a phytosanitary certificate issued by the Moroccan ONSSA (Office National de Sécurité Sanitaire des produits Alimentaires). The US requires USDA phytosanitary clearance. The GCC countries require a certificate of origin and health certificate. The UK post-Brexit requires its own phytosanitary documentation. Seasonal Supply & Allocation

Saffron is an annual crop. The Taliouine harvest runs from late October through November. Post-harvest processing and cooperative stock allocation are completed by December-January. Buyers who commit early, before or immediately after harvest, access the freshest stock and best pricing. For large-volume buyers, forward allocation agreements allow you to reserve cooperative stock before the harvest year begins. We advise on harvest forecasts and stock positions throughout the year.

Packaging & Storage Requirements

Saffron degrades when exposed to light, heat, and moisture. Proper storage requires airtight, opaque packaging, sealed tins or UV-resistant glass jars with inner heat-seal foil. Bulk saffron is supplied in vacuum-sealed, food-grade polyethylene bags within sealed outer containers. Storage temperature should remain below 20°C with relative humidity under 60%.
